VINIFICATION
- Grape selection by hand @ 22 ºB sugar, harvesting takes place early morning
- Sorted by hand
- Free run juice, 500L/ton
- Spontaneously settled without enzymes
- Juice spontaneously fermented in 70% concrete oval tanks, 20%,
- French oak foudre(7th fill) and 10%
- new 500L French Oak barrels
- Spontaneously fermented @ 16 degrees
- Malolactic fermentation took place
- 11months matured on lees, before its naturally stabilised and bottled
