IN THE VINEYARD
Produced from two distinct vineyard sites, a bush vine vineyard in Darling and from south-facing vineyards on Paarl Mountain. The Darling vineyard is approximately 300m above sea level on the west-facing hills outside Darling, planted in 2001 and is dryland farmed. The Darling Chenin Blanc vineyard is planted in decomposed granite soils, which differs from the surrounding vineyards, which are mostly planted in clay-heavy oakleaf soils. The Paarl vineyards are also planted in decomposed granite soils, but are trellised and drip irrigated. Both sites deliver great expressions of this versatile variety.
HARVEST DATES
Paarl grapes were picked from 8th – 10th February and Darling on the 6th and 13th of February 2023.
WINEMAKING
The grapes were picked very early in the morning and delivered cold to the cellar. Once in the cellar, the grapes were destalked and gently pressed. The free-run juice was settled for two days before the clear juice was racked off and cold fermented in tank, with 20% of the wine fermented in older French oak barrels. On completion
of fermentation, the wine was left on the fine lees for three months. The various picking dates all add complexity to the final selection. This wine was stabilized and filtered prior to bottling.
