IN THE VINEYARD
Don Goatti’s personal selection comprises of cool mountain sites from the Stellenbosch, Paarl and Darling regions.
HARVEST DATE
Sangiovese in late February 2022 and Cabernet Sauvignon in March 2022.
WINEMAKING
Grapes de-stalked and lightly crushed, the juice was fermented in stainless steel tanks. Following malolactic fermentation, the various components were sent to 225l barrels for 15 months. The wine was matured in a selection of French and American oak barrels, mainly 2 nd, 3rd and 4th fill barrels. The components were kept separate for maturation and then blended to achieve the wine as per Don Goatti’s intention. The wine was lightly filtered before bottling.
