WineDrop on Kloovenburg Chardonnay
At WineDrop, we’re proud to offer Kloovenburg’s thoughtfully crafted Chardonnay — a wine that reflects both precision in the vineyard and patience in the cellar. Grown in the rolling hills of Riebeek-Kasteel, this Chardonnay is shaped by Kloovenburg’s deep understanding of their terroir and a hands-on approach to winemaking.
According to the team at Kloovenburg, grapes are handpicked in the early morning to preserve freshness, then cooled overnight to lock in purity of flavour. Two separate harvests bring balance to the wine: one portion picked slightly earlier at 22° Balling contributes zesty acidity and length, while the second, picked at 24° Balling, adds richness and ripe fruit depth.
Once crushed and destemmed, the free-run juice is settled and transferred to 300L French oak barrels, with a mix of 30% new oak and seasoned barrels. Fermentation unfolds slowly — sometimes taking up to three months — allowing complex flavour development and a soft, textured mouthfeel. After fermentation, the wine is kept on its lees with minimal sulphur for added depth and a gentle creaminess. The final blend spends nine months in barrel before bottling.
The result is a refined Chardonnay with bright citrus, notes of mandarin and stone fruit, and a beautifully integrated toasty oak layer — perfect for both casual sipping and refined food pairing.
